My Mum suffers from coeliac disease, which is an auto immune disease caused by gluten that effects the stomach. It might sound like a problem, but with an adjusted diet most coeliac sufferers improve very quickly.

Gluten Free Tuna Fish Cakes
This recipe is dedicated to all the coeliac fish lovers out there, but anyone can enjoy this recipe because it tastes so good! It is my go to meal as it is very easy to prepare and the ingredients are almost always in the fridge or cupboard!

For this recipe you will need:
3 Large Potatoes
1 Large Tin of Tuna
Spring Onion
1/2 Cup of cornflour
1 Egg

How to make batter - fish recipe

After my post about how to make beer batter I got lots of requests for a plain and simple normal batter recipe. This recipe I have found for a batter mix is very simple and can be used for almost anything that you want to deep fry such as fish, pancakes or Yorkshire pudding.

For this recipe you will need:
  • 2 Eggs
  • 100g (4oz) Flour
  • 300ml (1.25 cups) Milk
  • A pinch of Salt
  1. You then add these ingredients into a food processor (mixer) and mix for 2 minutes (I told you it was easy! If you don't have a food mixer then you can beat the flour and milk together and then whisk in the eggs and salt.
  2. Let it stand in the fridge for 30 minutes and you are done!

The wahoo is well renowned as one of the fastest, if not the fastest, fish in the ocean. However, it is also well known for its superb eating qualities and for this very reason is a very popular fish with tropical water anglers. The flesh is suitable for many different types of recipes and is also popular as sushi with many anglers keeping a bottle of wasabi sauce on the boat for the ultimate sushi experience.

This recipe is a Hawaiian dish, which works really well for a tropical fish like the wahoo.
For this dish you will need:
  • Wahoo fillets (or steaks)
  • Pineapple
  • Onion
  • Red Bell Pepper
  • Ginger
  • Soy Sauce
To prepare this dish:
  • Simply cut up the pineapple and onion into rings and the bell pepper into flat peices ready for grilling.
  • Grill the ingredients on the BBQ for about 10 minutes
  • Peel the bell peppers and cut the ingredients into smaller peices
  • Add the fish to the ingredients with some soy sauce and leave to marinate
  • Cook the fish on the grill until ready
  • Heat the other ingredients to reduce the marinade
  • Plate the fish and pour the marinade over the top of the fish

In these days of fast food, instant meals and processed foods it is hard to know which foods are good for us. Baked cod fish recipes

When it comes to cooking I have a simple motto that goes something like this - "the simpler the recipe the less mistakes I can make." Fortunately when cooking fish there are hundreds of simple recipes that even I can't get wrong. Fish also has the added benefit of being very quick to cook and if you add to that the health benefits of fish oils, protein and low saturated fat content it makes sense why so many people are making the switch for traditional red meats.

Simple baked cod recipe
This recipe follows all of my rules. It is simple, quick to make and absolutely delicious. For this recipe you will need:
  • Cod (or other fish) fillet
  • Diced tomatoes
  • Chopped Leaks
  • Bell Pepper (green)
  • Minced Garlic
  • Cooking Spray
  • Salt and Pepper
  • Breadcrumbs
  • Parmesan Cheese
  • Crushed potato chips
  • Paprika
  • Cayenne
  • Melted Butter

Salmon Sushi Roll - Fish Recipe

Before I start explaining this one I must admit that I am not a great fan of sushi. I love fish, but just can't stomach it sushi style. Fortunately you can use smoked salmon with this recipe and I have had no trouble with it. I can highly recommend it to all the sushi wary people out there!

This is one of the simplest salmon roll sushi recipes out there and even I made it for my wife to test it before posting it. You will need some sticky rice (cook it with 25% more water), salmon (smoked it ok), soy sauce, wasabi, ginger and Saki. It takes virtually no time to make and the longest part of the preperation work is cooking the rice.

Fortunately, for you and me, there is a great video I have found showing the process of making this recipe which is very easy to follow. It is supposedly a romantic dish, but I am not sure why, maybe it just sounds better that way! Enjoy!

Fish recipe - Salmon Cakes (fish patties)

Salmon cakes (or patties as I call them) is one of my favorite go to recipes when I can't decide what I want for dinner. Salmon is tasty, very good for you and is readily available in most parts of the world. You can also replace the salmon in the dish with other similar fish which maked this a very versatile dish.

The recipe I use for salmon cakes is a Creole recipe that is full of flavor and I found a great video showing the process. The chef in the video also makes his own mayonnaise, which isn't too hard and tastes fantastic. I know what I am having for dinner tonight!

For this recipe you will need:
  • 3 cups of Salmon
  • 1/4 Veg Stock
  • 1/2 Onion
  • Red Bell Pepper
  • Green Bell Pepper
  • Orange Bell Pepper

I love cooking (and eating) fish for two reasons. I can catch my own so I know how fresh it is and cooking fish can be as quick and simple as you want to make it. Many fish recipes literally take 5 minutes or less to cook and preparation can also be made simple.

I found a really great video showing two of the most simple, yet tasty, saltwater fish recipes I have ever seen. These recipes can be used to impress your friends and with fresh fish they taste absolutely amazing!

For the following recipes you will need:
  • Fillets of saltwater fish (this recipe works best with any fish with white flesh.)

Smoked Trout Recipe - (How to smoke trout)

It was my anniversary yesterday and being a seafood lover I had to order the smoked trout on the menu. It was absolutely delicious and is the inspiration for todays post.

Many people don't consider trout when it comes to smoking and they tend to stick with the more traditional smoked salmon. While I consider trout to be one of the best fish to smoke, I find that almost any fish can be smoked and this recipe could also be used on a variety of fish species.

This recipe takes quite a while to cook, but is simple to prepare. The ingredients are as follows:
  • Whole Trout
  • Brown Sugar
  • Rock Salt
  • Table Salt
  • Your favorite seasonings (curry, teragon, lemon etc.)
  • Olive Oil
  • Lemon Juice
  • Garlic Salt
  • Lemon Slices

How to make beer batter - fish recipe

I must admit I love fried seafood and one of my favorite batter recipes is beer batter. It has such a lovely flavor and creates a delicious crispy coating on almost anything you can think of frying. I have personally used it on everything from fish to zucchini fritters and friends always comment on it's flavor and crispiness (and it is a great way to get your kids to eat their veggies!).

For this recipe you will need the following ingredients:
  • Plain Flour
  • Ground Nut Oil (this can be substituted with other oils)
  • Beer
  • Salt and Pepper
  • Spices (optional)
  • Seafood to batter
This recipe is very simple, but it makes great batter. You will probably find that it makes better batter than packet batter and contains much less salt than the packet variety, which is better for your health.

I recommend experimenting with different foods to batter as you never know when you will find a gem of a battered dish that you had never thought of (a bit like my Zucchini fritters).

Recipes for baked cod

Baked cod is one of the first meals I remember eating in my life and was a family favorite for years until I rediscovered my love of fishing and began bringing home to odd keeper for dinner. Cod has many nutritional benefits including Omega-3 oil, lower your risk of heart disease, control high blood pressure and many more. A four-ounce serving of cod provides 1/2 your RDI of protein and contains only 119 calories!

Easy Baked Cod Recipe
This video shows a really great baked cod recipe that is really easy to make yourself. It only takes 5 minutes to prepare and about 25 minutes to cook and requires the following ingredients:
  • 2lbs Cod Fillets
  • 1 cup seasoned bread crumbs
  • 3 tbsp butter (can be substituted with olive oil)
  • 3 tbsp Lemon Juice
  • Salt and pepper (to taste)


Other easy baked cod recipes
  • 1 1/2 lbs cod fillet (fresh or frozen)
  • 1 tbsp butter
  • Salt & pepper
  • 4 tomatoes, sliced
  • 2 cups Swiss cheese
  • 1/2 cup half and half (cream)

Remove skin and bones. Dry with paper towel. Preheat oven to 375 degrees. Melt butter in baking dish. Place fish topped with tomato slices. Sprinkle with cheese and pour cream over all. Bake 25 minutes or until fish flakes

Grilled grouper recipes (with video)

We catch a lot of grouper in my part of the world and while we don't call them that here in Australia we are still partial to these great fish. There are many species of grouper and in my experience smallish grouper make very good eating while the bigger ones are a little bit tough and tasteless. Grouper are an essential part of the reef ecosystem and because of this when considering taking a grouper for dinner you should always check your local rules and regulations and take only enough for your immediate needs.

Grilled grouper recipe
This video I found shows an amazingly simple grilled grouper recipe and one that can be made with only the following ingredients:
  • Grouper Fillets
  • Olive Oil
  • Salt
  • Fish/poultry seasoning flavors
  • Spices
The end result looks very appetizing and my trial of this dish turned out quite well (although I was using a different species of fish).

Canned tuna recipes

After my post yesterday I thought I would add some tuna recipes to my blog and if you use the light canned tuna like the post suggests you will most likely not have any problems. Remember that fish is still part of a balanced diet.

I have tried to gather some of the easier recipes. These recipes are great for unexpected guests or a quick meal. I am no chef, but even I can make these!

Tuna Balls

INGREDIENTS

  • 1 (6 ounce) can tuna, drained and flaked
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup chopped pecans
  • 1/4 cup chopped onion

DIRECTIONS

  1. In a medium bowl, blend tuna, cream cheese, 1/2 the pecans and onion. Shape into a ball or loaf. coat with remaining pecans. Refrigerate until serving.
Quick tuna salad

INGREDIENTS

  • 1 (7 ounce) can solid white tuna packed in water, drained
  • 1/4 cup creamy salad dressing (such as Miracle Whip™)
  • 1 tablespoon sweet pickle relish, or to taste

DIRECTIONS

  1. Mash tuna together with salad dressing and relish in a small bowl with a fork. Serve.

Traditional Jamaican Brown Fish Stew
Difficulty: Easy - Medium
Preparation Time: 1 Hour (Marination time)
Cooking Time: 10 Minutes

This fish recipe is a traditional Jamaican recipe called brown stew fish. The ingredients should be available to most people around the world and if you can't find a certain ingredient then I am sure it can be substituted. This recipe could be used with any fish, but I would certainly recommend using something that stays together when fried. It is certainly not the hardest dish I have ever made and the results were very delicious.

This is a lovely recipe that anyone should be able to make and it looks so good. Like the chef says in the video you can buy pre-made lobster or shrimp stock and save yourself all the trouble. With pre made stock the recipe does not take very long to prepare and you will really impress your friends with the sophisticated taste. Enjoy!

The ultimate fishing blog is back

Well after one week away on holidays I am back feeling refreshed and ready to blog. I have heaps of great stuff planned for this year including more knots, recipes and tackle reviews. This is actually a fish recipe for herb barbecued fish, but the first part perfectly shows how to clean a fish for the table. This is something that new fishers often have trouble with and I thought that it would be helpful to post a video of the process. I am hoping to find a video of the proper filleting process too - so keep checking back for that in the future.

If you watch the whole way through you will also find a great recipe for barbecued fish that I have personally tried and enjoyed. In my opinion nothing beats a whole fish cooked on the BBQ with herbs, spices, garlic and ginger YUM!

Fish Recipe - Steamed fish with vegtables

As promised I have decided to post more fishing recipes for those who love to eat their catch, or for people who buy their fish (there is no shame in that!). Todays recipe is steamed fish with vegetables and is not only an extremely healthy meal, but is really easy to prepare. My wife tried this and I was surprised how much I enjoyed it (I am a fried fish type of guy). I hope this helps you with your next fish meal!
