Vietnamese cooking lessons at School of Wok are perfect if you're a newbie to the cuisine or even an experienced foodie, teaching you a ton of recipes that are great for the summer. So now that the weather is starting to (finally) pick up, we thought we'd take a look at one of Vietnam's quintessential snacks: summer rolls.

Summer rolls, also known as goi cuon or Vietnamese spring rolls, differ from the more widely known Chinese spring rolls in that they're uncooked, a little larger and jam-packed to the brim.

They're often stuffed with raw vegetables and chilli, rice vermicelli and herbs such as mint and coriander (with the addition of meat or fish being completely optional). They're then typically dipped in salty, zingy or sweet sauces before devouring - perfect food for sharing with friends and family around the dinner table!

According to Nguyet Pawlyn, School of Wok's very-own Vietnamese cookery specialist, summer rolls are really fun to make and great for the summer months.

"Summer rolls are very much part of Vietnamese cuisine as it's an interactive experience: all the ingredients are brought to the table, so each person can make there own, making it to their own taste. They're very simple to make and so fresh and healthy!"


See below for School of Wok's own simple yet tasty recipe for summer rolls, ideal for a quick, easy and ultra-healthy meat-free meal anytime of the week. These are extremely versatile and great for experimenting with different flavours...or just what's left over in your fridge!

INGREDIENTS

1 pack Vietnamese rice-flour paper wrappers
Handful of rice vermicelli, soaked in hot water for 3 mins then drained
3 spring onions, sliced finely
8 dried Chinese Mushrooms, soaked in hot water overnight then roughly chopped
1 bag bean sprouts
4 carrots, cut into matchsticks
Handful of mint leaves

The Marinade
2 tbsp light soy sauce
1 tsp sugar
1 tsp sesame oil

The Lime Dressing
1 chilli, finely chopped
2 cloves garlic, finely chopped
Juice of 3 limes
3 tbsp honey or palm sugar
1 tbsp sesame oil
Light soy sauce, to taste

Dress the spring onions, mushrooms, bean sprouts and carrots lightly with the marinade mixture in a large bowl.

Dip 1 paper wrapper into a bowl of cold water until soft then lay flat on a work top or plate. Place a small handful of the marinated vegetables into the centre arranged into a small rectangle, leaving space at either side.

Fold the bottom of the wrapper over the vegetables and stick down (the pastry should be sticky enough to stick to itself). Roll the wrappers up tightly so it just encloses the filling, fold in the sides and stick, then continue to roll until fully closed. Repeat with the rest (until you run out of ingredients!).

Mix together ingredients for the lime dressing then serve alongside your stack of summer rolls.

Thoughts of the sand and the surf call to us this time of year. But, if a trip to the shore isn't on your agenda, take a little trip with bite-sized seafood treats.

Seafood safety
You may worry that serving seafood can be tricky. After all, it needs to be fresh and kept cool. With proper planning, and proper handling, you have nothing to worry about. Once you've determined your menu of seafood appetizer recipes, do your shopping no more than one or two days before the event. Keep everything refrigerated immediately after preparing, and serve on chilled platters or over ice.

You may not want to serve seafood exclusively, but your next party should have a variety of seafood dishes for people to choose. We found several unique recipes that includes several types of shellfish and a fish dip.

The accompaniment
The best thing to serve with your fresh seafood appetizers are crisp white wines or light cocktails.
Shellfish pairs well with light selections like Vouvray, Champagne, even off-dry Gewurztraminer.
White fish calls for a White Burgundy (made from Chardonnay.) According to foodandwine, salmon, while typically served with white wine, works well with a lighter red like Pinot Noir.

As for cocktails, there are really no recommended pairings, but if people don't care for wine, serve a light, refreshing adult beverage like this "Afterglow".
2 ounces vodka
1 ounce Cointreau
Splash of lavender syrup
Blackberry garnish
Pour first 3 ingredients in an ice filled shaker and shake vigorously. Strain into a martini glass and garnish with blackberry

Recipe for Basil Punch By Seema Gadh from India Food Network

Ingredients:

? 2 glasses of cold water
? 5 tbsp of powdered sugar
? A pinch of black salt
? Basil leaves grounded into a paste with 1 tbsp of water
? Juice of 2 lemons
? Ice cubes
Procedure:

? In a jug transfer the basil paste
? Add the lemon juice
? Add black salt
? Add 5 tbsp of sugar
? Stir well
? Add the ice cubes
? Add 2 glasses of water
? Stir well

Recipe for Chilled Cucumber and Mint Soup By Asha Khatau from India Food Network

Ingredients:

? 450g cucumber, peeled, sliced and salted
? 2 cups thick yoghurt
? 2 cups cold water
? 2 tbsp lemon juice
? 1/2 cup vegetable stock
? 6-7 cloves garlic
? 2 tbsp fresh mint leaves
? Salt to taste

Procedure:
? Put the cucumbers in a liquidiser
? Add the yoghurt
? Ice cold water
? Lemon juice
? Vegetable stock
? Garlic
? The mint leaves
? And finally salt to taste
? Churn together till well blended
? Tip - This drink/ soup is best enjoyed on a hot summer day
? Your Chilled cucumber & mint soup is ready to serve

Tip - Discard the water remaining in the cucumber bowl to avoid a bitter taste

Recipe for Falafel Salad By Asha Khatau from India Food Network

Ingredients:

? 4-5 cups of mixed salad greens, torn with hand and soaked in ice cold water (you can either use iceberg lettuce, romain lettuce, lollo rosso or a mixture of all),
? ? cup green olives, sliced
? ? tomatoes, deseeded and cut into cubes
? 1 green cucumber, sliced and halved
? ? cup spring onions, sliced
? 6-8 falafel bullets (green gram soaked overnight have been pasted and made into bullets)
? 7-8 mint leaves, torn roughly with hands
? ? cup feta cheese, crumbled
? 1 tsp sumac
? For dressing:
? ? cup thick yogurt
? 2 tbsp lemon juice
? ? cup ice cold water
? 2 tbsp virgin olive oil
? 2 tbsp tahini paste
? Salt and pepper to taste
? Mild paprika for garnish
Procedure:

? Start by putting all the salad ingredients in a bowl
? Put the lettuce leaves first
? Scatter the sliced olives over the lettuce leaves
? Add tomatoes
? Add cucumber
? Add spring onions
? Add mint leaves
? Add feta cheese
? If the feta cheese appears somewhat gooey, cut it with the edge of a knife
? Add 1 tsp sumac
? Sumac adds a nice tangy flavour to the salad
? Place the falafel bullets last
? You can either use whole falafel bullets or cut them into two as per your convenience
? Keep the salad in the refrigerator and allow it to chill for a while
? For dressing:
? All the ingredients have to go into a blender
? Start with the yogurt
? Add 2 tbsp tahini paste
? Add 2 tbsp lemon juice
? Add 2 tbsp extra virgin olive oil
? Add salt and pepper as per taste
? Add about ? cup of chilled water
? Shut the lid of the blending jar and churn it in the liquidizer
? Add dressing as per your requirements
