The summer is the perfect time to have a brunch party. It is earlier in the day so the heat will not be unbearable and easy finger foods are a great way to keep things light and simple. For your next brunch party try this delicious recipe for Egg Muffins. Egg muffins combined with Cheese Crisps is the perfect gourmet snack for an afternoon with friends and mimosas.

These delicious and easy finger foods take about 45 minutes to prepare and bake. Another great thing about them is that they are low in fat and calories, but high in protein. This recipe makes enough for about six muffins, but the recipe can be doubled to accommodate more guests.

Ingredients:
4 Eggs
1/2 cup shredded cheese
1/4 cup Mushrooms
1/4 cup yellow peppers
1/4 cup onions
Salt and pepper to taste
1/2 cup John Wm. Macy's Melting Romano CheeseCrips

Directions
1.Preheat the oven to 350 degrees
2.Line a muffin tin with muffin cups and spray with olive oil.
3.In a separate bowl mix together eggs, cheese, mushrooms, yellow peppers, onions, salt and pepper.
4.Pour mixture to the halfway mark in the muffin cups.
5.Bake for 25 to 35 minutes.
6.Remove muffins from the oven. Wait to cool for about five minutes and sprinkle crushed cheese crisps on the top of each muffin.
7.Serve and enjoy!

One of our personal favorites is "Chickenless" Buffalo wings. This recipe is a great idea for a summer cookout and makes a wonderful and easy party food.


Tempeh, an Indonesian fermented soybean food that is low in fat and calories, is used to replace the chicken. It is more solid than Tofu and has a stronger texture, which gives off a more chicken like feel. This quick and easy appetizer takes only about 40 minutes to prepare and to cook. It is the perfect option for a lighter and unique alternative to mundane and easy party foods.

Ingredients:
Wings:
8 oz package of Tempeh
1/3 cup soy or skim milk
1/3 cup flour
Salt
1 tsp basil leaves
1 tsp paprika
1 clove garlic
Pepper to taste
1 cup crushed Romano Garlic CheeseSticks
Wing Sauce:
1/2 cup Buffalo wing sauce of choice
1 tablespoon butter
1 tablespoon ketchup

Directions:
1.Preheat oven to 400 degrees. In a large pot, bring 4 cups of water to boil.
2.Cut tempeh into individual slices. If this is your first time eating tempeh, I would recommend cutting it into thin strips to reduce any texture issues. After the tempeh has been sliced, add to the boiling water and let cook for 15 minutes.
3.Set out three medium sized bowls. In the first bowl add the milk. In the second bowl add the flour, salt, basil, paprika, garlic, pepper and CheeseSticks. In the third bowl combine the Buffalo wing sauce, butter, and ketchup.
4.When the tempeh has been boiled, rinse in strainer with cold water. Then dip the cooked tempeh in the three bowls starting with the milk, followed by the dry mixture and ending with the wing sauce.
5.Place the tempeh on a greased baking pan and cook each side for 10 minutes.

This easy party food can be served in several ways. Chop the wings into individual chunks and serve it in a salad for a lighter appetizer. If you would like to serve this as a meal, simply pair the wings with lettuce, tomatoes, and a blue cheese sauce for great buffalo wraps. Ingredients:

* 1 ? can of tomato sauce
* 4 dashes of seasoning like oregano, basil, garlic, salt, pepper, etc.
* 1 pound of turkey mince
* 1 bag of frozen soup vegetables
* 8 lasagna noodles
* ? bag Mexican cheese

Directions

1. Add the sauce and seasonings of your choice in a pot and let it simmer.

2. Meanwhile fry ground turkey in a pan till its cooked thoroughly.

3. Boil lasagna noodles in a pot of salted water till al dente and make sure you keep stirring.

4. Put vegetables in a microwave proof bowl and microwave it on high for around 2 minutes.

5. Put a little sauce in a pan and put down 2 lasagna noodles. Spread a little bit of the turkey meat on this, add some of the veggies.

6. Spread some of the sauce you have as a layer and then sprinkle adequate amounts of cheese over sauce.


7. Repeat these steps you've used all the noodles that you have.

8. The last layer should be of sauce and cheese in that order.

9. Cover the dish with a foil and bake it in the oven for around half an hour.

10. Your lasagna recipe is ready to be eaten!

How To Cook Lasagna With A Little Twist (rajiv tiwari)

Lasagna can be made in a large number of ways. Unlike the usual recipes, this one adds an element of surprise to your dish. Lasagna is a largely flexible noodle that you can experiment with to create your very own recipe. Butternut Squash Lasagna is one of those unusual dishes that will leave you surprised with its yummy taste. Butternut Squash Lasagna

Ingredients:
* ? butternut squash chopped into cubes
* Extra-virgin olive oil for drizzling
* Salt and pepper to taste
* ? pound ruffle-edge lasagna noodles, broken
* 2 cloves garlic, finely chopped
* ? medium head endive , chopped
* About ? cup chicken stock
* ? cups fresh ricotta cheese
* A small handful of thinly sliced sage leaves
* ? cup grated Parmigiano-Reggiano
* 1 tablespoons butter
* 1 tablespoons flour
* 1 cup whole milk
* Freshly grated nutmeg to taste
* ? pound Italian Fontina cheese

Directions:

1. Heat the oven to around 400?F.

2. Put the squash on a baking sheet and lightly add a drizzle of extra-virgin olive oil and salt and pepper to taste. Cook till the squash is golden at edges and tender.


3. Bring a large pot of salted water to a boil and cook the lasagna a little lesser than al dente.

4. While the water is cooking the lasagna, heat a tablespoon of extra-virgin olive oil over medium flame in the pan. Add garlic and stir, then add endive and wilt. Add a little salt and pepper to taste, add stock and simmer gently until ready to use.

5. In a bowl mix the together ricotta, sage, salt, pepper and cheese.

6. In a saucepan, melt the butter over medium heat. Whisk in flour, cook and then add the milk. Raise the flame and add salt, pepper and nutmeg to the sauce. Let sauce thicken and taste to check seasoning.

7. Drain the lasagna noodles and add to the pot. Stir in ricotta cheese mixture, mix thoroughly and then add the roasted squash and endive.

8. Transfer to a casserole and pour the milk sauce. Cover with small layer of Fontina cheese and place in the oven to bake till it's bubbly and brown.

9. Serve your lasagna hot!
