Salisbury Steak

Makes 5 servings
INGREDIENTS
~ 1 pound extra-lean ground beef
~ 3 cups fresh mushrooms, sliced
~ 1/4 cup bread crumbs
~ 2 egg whites
~ 1/4 cup skim milk
~ 1/4 teaspoon dried thyme leaves
~ 3 tablespoons low-carb ketchup
~ 1 jar (12 ounces) fat-free beef gravy

DIRECTIONS
1. Finely chop 1 cup mushroooms and set the other 2 cups aside. In a medium-sized mixing bowl, combine finely chopped mushroooms, ground beef, bread crumbs, egg whites, skim milk, thyme, and 1 tablespoon of the ketchup.
2. Mix together very well. Shape the mixture into 5 oval patties, about 1/2 inch thick.
3. Coat a 12-inch skillet in cooking spray and heat over medium-high heat. Add the patties and cook for about 2 - 3 minutes, flip and continue to cook for another 2 - 3 minutes, until brown.
4. Add the remaining 2 cups of mushrooms, 2 tablespoons of ketchup, and gravy. Bring to a boil, then reduce heat to low. Cover and let simmer for 5 - 10 minutes, until patties reach desired doneness.

To compliment this meal, I would use a side of vegetables and brown rice. You choose your own sides!
