Makes 10 servings (1 muffin per serving)
INGREDIENTS
~ 1 cup old-fashioned oats, finely blended
~ 1 cup fat-free cottage cheese
~ 1 tablespoon vanilla extract
~ 8 egg whites
~ 14 pitted dates
~ 1/2 lemon, juiced
~ 1/4 cup ground flaxseed
~ 1/2 cup cinnamon
~ 4 scoops chocolate or vanilla whey protein powder
~ 3/4 cup fresh or frozen mixed berries
DIRECTIONS
1. Preheat oven to 400 degrees F.
2. Blend all the ingredients except the berries until it's a smooth batter. Gently fold the berries into the batter.
3. Lightly coat a non-stick muffin pan with cooking spray and pour the batter evenly in the 10 cups (each slot should only be 3/4 full). Bake for 16 minutes, or until cooked. The tops should be golden and a toothpick inserted in the middle should come out clean. Let them sit for a few minutes before removing them from the pan.
