Simply Healthy Dinner Recipes are a Breeze with a Well-Stocked Pantry

With today's hectic urban lifestyle, working professionals often resort to fast food after a busy day at the office. It's convenient but also unhealthy. Fixing dinner shouldn't have to be a chore. Even if you're no culinary whiz, simple healthy dinner recipes are possible if you have a well-stocked pantry. The idea is to avoid the need to go grocery shopping every time you cook, because it cuts through the food preparation time.

Knowing what to keep on hand makes it easy for me to cook a delicious, nutritious meal every night of the week that doesn't involve burgers, fries, pizza or anything deep-fried. The benefits of cooking my own meal over opting for take-out are fairly obvious - I control the amount of salt, fat, sugar that goes into everything as prepackaged food items contain preservatives and additives that have no business in my food or my body. Eating real food goes a long way in improving my mealtime habits.

Still confused on what to pick at the grocery? Allow me simplify things by sharing food items that could be staples in your home. Adjust it according to your family's lifestyle and eating habits and you'll be whipping up a meal in a snap.

Flours - unbleached white, wheat, rice, cake, almond

Sugars - brown, cane or beet, powdered, turbinado or demerara

Dry Pastas - a few different shapes and sizes

Grains - couscous, rice, barley, quinoa, oats, flax, cornmeal

Oils - olive oil, canola oil, coconut oil, peanut oil, sesame oil

Vegetables - onions, potatoes, garlic

Canned/Jarred Tomatoes - sauce, diced, stewed, paste

You don't have to buy everything at once. The trick here is to consider the food items you eat regularly. Make a list of the foods you eat at least once a week because chances are you will need the same items when you replenish your stock. Build up your pantry gradually. Remember to also clean out your pantry occasionally and dispose of anything past its expiration period. A well-stocked pantry makes grocery shopping easier because you only need to buy perishable items (meat, vegetables and other fresh ingredients) and not every herb, sauce or condiment needed for a particular recipe you have in mind for dinner.

I cook from time to time so I'm pretty much familiar with the stuff I have in my kitchen. Mom says I make the best buffalo wing sauce while my raspberry vinaigrette dressing recipe is fast becoming a favorite at family gatherings. I've recently experimented with marinades using what I have in my pantry and I'm close to perfecting what I consider to be the best marinade for chicken. Now who says cooking is boring, huh?

I credit my love for the culinary arts in keeping me healthy all these years. I am now conscious of what I eat and even more with the food preparation. To eat healthy, I made healthy choices in what I eat all the time - meals and snacks. Eating a healthy, balanced diet provides me the necessary nutrients I need. You can also add a pinch of sugar, depending on your taste.

The next step is, to add liquids. There are many options to choose from:

White wine vinegar - adds tart and crisp flavorOlive oil- adds sheen to the sauceBalsamic vinegar- for a bold flavorWater - doesn't add any flavor but gives you the consistency you desire.

In usual 1/4 to 1 cup addition of liquid will give you the desired consistency. If you want it to spread easily, adding more of olive oil will be helpful. Once you are done with this, add spices to adjust to the liquid levels. Add more salt and pepper and taste. With this, your instant pizza sauce is ready to use. You can use right away or keep it in refrigerator for a couple of hours so that the taste develops further. The choice is yours!

You can try it out and share your experiences with friends and family. One thing is sure though, making the sauce at home is very simple with no extra efforts required. Try it out and add flavor to your dishes.

Here is a very popular and favorite recipe for stir fry that your family will love and enjoy. The spring vegetables and chicken breast strips stir fried with fresh ginger, the lime juice and a touch of soy sauce for a quick weeknight dinner. At home, we always enjoy making stir fries for dinner, the art of cooking veggies and protein in a wok and having dinner ready in just few minutes.

Many of us just use whatever vegetables we have on hand, a great way to clean up our refrigerators. You can just serve it over white cooked rice, quinoa, noodles or whatever. We always love the crunch of the sugar snap peas with the chicken, best crunching them raw while you are cooking.

As a super quick procedure, you can start first by using perhaps the Jaden's rice bran oil which is made from the outer layer of the rice kernel where all of the nutrients are found, which is very high in antioxidants and is perfectly suited for high heat wok cooking. But you can also use another type of oil that has a high smoke point such as sesame oil, canola or grape seed oil. This is below 200 calories, weight conscious people, this is gluten free, and low on carbohydrates, very clean that can be easily adapted for Paleo Diets.

As a Paleo note: For people you who are on a Paleo diet, you can substitute the cornstarch with arrowroot, and the rice oil with coconut oil, lastly the soy sauce with coconut liquid aminos. Here is the recipe for the SPRING STIR FRIED CHICKEN WITH SUGAR SNAP PEAS AND CARROTS. The original recipe serves 4 persons.

INGREDIENTS:

For the sauce:

1 tablespoon low sodium soy sauce (or Braggs Liquid Aminos or Tamari for GF)

1 tablespoon fresh lime juice

2 tablespoon water

1 teaspoon cornstarch

FOR THE STIR FRY:

1 pound boneless, skinless chicken breast, already sliced thin into strips

Salt to taste only

1 tablespoon rice bran oil, or canola

1 teaspoon fresh gingerroot, peeled and minced and sliced

2 teaspoon garlic, peeled and minced and chopped

1 cup sugar snap peas

1 cup of carrots, peeled and sliced into strips diagonally

Scallions to garnish

THE PROCEDURE:

In a small bowl, combine the soy sauce, the water, the lime juice, and the cornstarch. Stir them until they are smooth and the cornstarch is fully dissolved and set it aside.

Then season your chicken breast strips with salt.

Heat a large skillet or a wok over high heat. Wait until the wok is very hot, then add half of the oil and then add the chicken strips sizzling in your wok. Stir fry them occasionally until the chicken is cooked through and browned, for about 3 to 4 minutes. Remove the chicken from the wok with a slotted spoon into a plate and set aside. Reduce the heat to medium now.

Add the remaining oil into the wok. Then add the garlic and the ginger, and stir for 20 seconds. Then you can now add the sugar snap peas and the carrots or any other veggies that you may wish to add, and stir over medium high heat, until they are crisp-tender, for 3 to 4 minutes.

Return the chicken to the wok, and add the soy sauce-lime juice mixture. Mix them well and cook for 30 seconds to perhaps 1 minute. Serve immediately while they are hot.

Directions:

1. To start making your pasta recipe, you must first preheat the oven to 375 degrees F.

2. In a large ovenproof pan, stir in the tomatoes with the olive oil and thyme and add the salt and pepper. Roast the tomatoes for about till the start to brown and their skins break apart.

3. In a separate pot cook the linguine until al dente in salted boiling water and drain. Make sure you don't overcook if you want a perfect pasta recipe.

4. Add in the cream to the tomatoes and let it simmer. Cook over a moderate flame, mashing the tomatoes carefully.

5. Add the shrimp and simmer again till cooked completely through for the pasta recipe.

6. Add with salt and pepper and the linguine and lemon juice to the pan and mix well till the pasta recipe is coated with the sauce.

7. Add the lemon zest and parsley and mix again.

8. Transfer the pasta recipe to warm plates and serve.

Ingredients:

* 4 teaspoons olive oil
* 2 large cloves garlic, chopped
* 1/3 cup dry white wine

* Dried spicy red-pepper flakes
* 1 ? cups canned crushed tomatoes
* ? cup bottled clam juice
* Salt to taste
* 1/3 pound chopped clams
* 4 tablespoons chopped parsley

Directions:

Fortunately, calorie-free herbs add flavor without all that extra baggage, and they're easy to use. Herbs are edible, fragrant plants that add flavor and nutrients to many types of foods. By playing with herbal variations in your recipes, you can get a completely different taste every time you cook. When choosing dried herbs, it's best to buy organic so you're sure the herbs have not been irradiated. When you're buying fresh herbs, whether at the grocery store or a farmers' market, be sure to get them as close as possible to the day you plan to use them.
Before cooking with fresh herbs, you'll need to wash them carefully. Rinse the herbs underneath running water, then place them on a paper towel or shake them off to dry. If you're cleaning large leaves like basil or a large bunch of parsley, place them in a bowl of cool water and swirl it around. Transfer the herbs to a clean bowl of water and continue to rinse until the water stays clear. Then dry them off and prepare them for cooking. Generally, you just want to use the leaves, not the stems, of the herb.

Ingredients

* 1 1/2 pounds boneless, skinless chicken breast halves, cut crosswise into 1/4-inch-thick slices (longer pieces cut crosswise in half again)
* 1 tablespoon cornstarch
* Coarse salt and ground pepper
* 6 teaspoons vegetable oil
* 1 small onion, halved and cut into 1/4-inch-thick wedges
* 2 bell peppers (red, yellow, green, or a mix, ribs and seeds removed), cut into 1/4-inch-wide strips
* 6 garlic cloves, minced
* 2 tablespoons rice vinegar
* 2 tablespoons soy sauce
* 1 1/2 cups fresh basil leaves, larger leaves torn in half
* Cooked white rice, for serving (optional)

Directions

Pat chicken pieces dry with paper towels. In a medium bowl, toss chicken with cornstarch until coated; season generously with salt and pepper.

In a large wok or nonstick skillet, heat 2 teaspoons oil over medium-high. Cook half the chicken, turning once, until browned, but not completely cooked through, 2 to 3 minutes total. Transfer to a plate. Repeat with another 2 teaspoons oil and remaining chicken. Transfer chicken to plate. Set aside. Wipe out skillet with a paper towel.

To skillet, add remaining 2 teaspoons oil, onion, and bell peppers; cook over medium-high heat, tossing often, until beginning to brown, 3 minutes. Add garlic; cook until fragrant, about 1 minute.

Add 1/4 cup water, vinegar, soy sauce, and chicken to pan; cook, tossing, until chicken is cooked through, about 1 minute. Remove from heat. Stir in basil leaves. Serve immediately, over white rice, if desired.

1. Keep a big skillet over a medium flame and allow it to heat.

2. To start making the sauce for the pasta recipe put in the oil, butter, garlic and shallots and gently saut? for around 5-6 minutes.

3. Add in the vodka to the pan, and keep stirring while doing so. Let it reduce by half and then add in the chicken stock and tomatoes.

4. Bring the pasta recipe sauce to a boil and then reduce the flame to let it simmer.

5. Add the salt and pepper.

Ingredients:

* 3 cups of cooked pasta
* 2 chicken breasts, sliced

* 2 tablespoons plain flour
* 3 cups milk

7. Stir in the milk, and bring the pasta recipe mixture to a boil. Add fresh cream, cooked chicken, salt and pepper according to taste.

8. Toss in the cooked pasta and add water if you think the sauce is too thick. Sprinkle cheese and parsley on top.

5. Bake the pizza recipe in the oven till the lamb is cooked through.

6. Stir lemon juice, tahini and two tablespoons of water. Add pepper for seasoning.

7. Combine arugula with tomatoes, red onion and remaining mint in a medium bowl for the remaining topping of the pizza recipe.

A Prosciutto Pizza Recipe That Won't Disappoint

Ingredients:

* 350 g package whole-wheat pizza dough
* 3 tablespoons olive oil
* 100 ml can pizza sauce
* 250 g fresh mozzarella, sliced
* 4 slices of prosciutto
* ? cup fresh basil, chopped

Directions:

1. Preheat one side of the barbecue to medium-high to cook the pizza recipe.

2. Divide pizza recipe dough evenly into 3 pieces. Roll each piece on a lightly floured surface into 6 inch crusts.

3. Cover one side of the dough by brushing oil evenly.

4. Slowly place the pizza recipe crust, oil-side down on the heated grill. Brush oil over dough. Grill until it starts to puff up and grill marks appear on the undersides.

5. Flip the crusts over and continue cooking till you get the same result. Transfer to unheated grill side.

6. Spread 2 tablespoons of pizza sauce over each crust and put the cheese equally on top.

7. Grill the pizza recipe again, rotating and switching pizzas halfway through, until cheese is melted for around 10 minutes.

8. Put the prosciutto and basil on top and serve!

Indian Chicken and Rice Salad

Ingredients - 12 Servings - 3

1 1/2 cups (300g) basmati rice
2 1/4 cups (560ml) water
2 cups coarsely shredded Steggles roast chicken
1 tablespoon tandoori paste
2 tablespoons natural yoghurt
1 Lebanese cucumber, thinly sliced lengthways
1 carrot, peeled, thinly sliced length ways
1/2 cup coarsely coriander
1/2 cup mint leaves
Mango chutney, to serve
Natural yoghurt, extra, to serve

Rinse the rice in a sieve under cold running water until the water runs clear. Place rice and water in a large saucepan. Cover with a tight-fitting lid or foil and bring to the boil over high heat. Reduce heat to low and cook for 10 minutes or until water is absorbed. Remove from the heat and set aside, covered, for 5 minutes. Set aside to cool slightly.
Step 2

Heat a large frying pan over medium heat. Add the chicken, tandoori paste and yoghurt and cook, stirring, for 5 minutes or until well combined and heated through. Remove from heat.
Step 3

Spoon the rice among serving bowls. Arrange the cucumber and carrot ribbons over the rice. Top with chicken mixture, coriander, mint, mango chutney and dollop with yoghurt. Serve immediately.

Ingredients

3 egg yolks
Juice of 2 whole lemons
2 sticks butter, melted and slightly cooled
Dash of salt
Cayenne pepper
4 whole eggs
2 English muffins split, toasted and buttered

4 slices Canadian bacon, warmed in a skillet
Dash of paprika

Directions

Add the egg yolks to a blender or a food processor. Add in the lemon juice and blend for several seconds. With the blender on, slowly drizzle in the melted butter. Turn off the blender and add in a little salt and cayenne. Whip it again until combined. Set this aside for a minute.

Next, poach an egg by gently cracking an egg into simmering, slightly bubbling water.

Leave the egg alone for 2 to 2 1/2 minutes, and then remove it with a slotted spoon and carefully place it on a plate. Repeat with the remaining eggs.

To serve, place a buttered, toasted English muffin half on a plate. Top the English muffin with a warm slice of Canadian bacon. Place the warm poached egg on top. And then drizzle on some warm hollandaise. Sprinkle a little paprika on top.

One should not consume raw and lightly-cooked eggs due to the risk of Salmonella or other food-borne illness. To reduce this risk, use only fresh, properly-refrigerated, clean, grade A or AA eggs with intact shells, and avoid contact between the yolks or whites and the shell. For recipes that call for eggs that are raw or undercooked when the dish is served use shell eggs that have been treated to destroy Salmonella, by pasteurization or another approved method.
