With today's hectic urban lifestyle, working professionals often resort to fast food after a busy day at the office. It's convenient but also unhealthy. Fixing dinner shouldn't have to be a chore. Knowing what to keep on hand makes it easy for me to cook a delicious, nutritious meal every night of the week that doesn't involve burgers, fries, pizza or anything deep-fried. The benefits of cooking my own meal over opting for take-out are fairly obvious - I control the amount of salt, fat, sugar that goes into everything as prepackaged food items contain preservatives and additives that have no business in my food or my body. Eating real food goes a long way in improving my mealtime habits.

Still confused on what to pick at the grocery? Allow me simplify things by sharing food items that could be staples in your home. Adjust it according to your family's lifestyle and eating habits and you'll be whipping up a meal in a snap.

Flours - unbleached white, wheat, rice, cake, almond

You don't have to buy everything at once. The trick here is to consider the food items you eat regularly. Make a list of the foods you eat at least once a week because chances are you will need the same items when you replenish your stock. Build up your pantry gradually. Remember to also clean out your pantry occasionally and dispose of anything past its expiration period. A well-stocked pantry makes grocery shopping easier because you only need to buy perishable items (meat, vegetables and other fresh ingredients) and not every herb, sauce or condiment needed for a particular recipe you have in mind for dinner.

I cook from time to time so I'm pretty much familiar with the stuff I have in my kitchen. Mom says I make the best buffalo wing sauce while my raspberry vinaigrette dressing recipe is fast becoming a favorite at family gatherings. I've recently experimented with marinades using what I have in my pantry and I'm close to perfecting what I consider to be the best marinade for chicken. Now who says cooking is boring, huh?

I credit my love for the culinary arts in keeping me healthy all these years. I am now conscious of what I eat and even more with the food preparation. To eat healthy, I made healthy choices in what I eat all the time - meals and snacks. Eating a healthy, balanced diet provides me the necessary nutrients I need. These nutrients give me energy and keep my heart beating, my brain active, and my muscles working. And it's all thanks to my well-stocked pantry.

Banana Cake - Refreshing, Tasty and Healthy

It is a proven fact that the banana cake has as an abundant supply of different types of nutrients such as vitamin B6, vitamin C, potassium and the like. The banana cake is also said to have the capability to prevent different types of kidney diseases including kidney cancer to a certain extent. Here are some of the superb banana cake recipes.

Ingredients

Desiccated coconut 2 ½ cupsMashed ripe bananas 750gRice flour 1 ¼ cupsWhite sugar 1 ½ cupsCoconut milk ¾ cup

For serving

Desiccated coconut ½ cup

How to prepare it?

Take a cake pan and properly grease it. Introduce desiccated coconut into a bowl and add cold water into it. Let it stand for 10 minutes. Strain it using a fine sieve and get rid of the excess water, if any. Shift the sieved coconut into a bowl of large size and add the combination of ingredients such as banana, rice flour, sugar and coconut oil. Stir it well so as to make a perfect mixture out of these ingredients. Pour the mixture into the prepared pan. Cover it well with foil. Introduce the cake pan into a steamer. Carefully set it over a large saucepan containing boiling water. Make sure that the water does not make any contact with the base of the pan. Cover the steamer with a lid. Steam the cake for at least 2 ½ hours or until it is fairly cooked. Take the cake out of the steamer. Keep it cool. Carefully transfer it onto a plate. Spread the toasted coconut over the top. When this is finished, serve it. It would be better if you serve it along with fresh fruits.

Upside down banana cake

Ingredients

Melted butter 6 tablespoonsBrown sugar 1 cupRipe bananas 5Yellow cake mix 18 ouncesEggs 3Rum/ milk / water 1/3 cupVegetable oil ¼ cup

Method of preparation

Preheat the oven to 350 degrees F. Take two 9 in round pans and properly grease and flour them. Melt the butter by heating it over low temperature. Split up the melted butter between two pans. Disperse half of the brown sugar into each pan. Take one ripe of banana and cut it into pieces. Then, arrange it on the bottom of the pan. Take another ripe banana and cut into small pieces so as to arrange the bottom of the pan. Make a combination out of the ingredients such as cake mix, eggs, oil and rum. Beat it well using an electric mixer so that all the ingredients are properly mixed for at least 2 minutes until the mixture is fairly moistened. Mash well the leftover bananas and introduce the mashed bananas into the cake mix. Split the mixture into each pan. Keep it in the oven and bake it for 30-35 minutes until the cake tester inside the cake mixture comes to vision clearly. Allow it to cool for 5 minutes. Transfer it into serving plates. Then you can serve it.

With this article, I just wanted to share with you one of my special muscle meal plans that I love. Surprisingly, it actually comes in the form of a salad, but it is killer!

I know the ladies will love this idea, but for all of you guys out there that think eating a salad makes you less of a man… Well, you haven’t tried my ultimate “salad on roids” yet!

Keep in mind that this salad is not low in calories. It’s not low in fat. It’s not low in carbs.

And guess what…that’s the whole point! It’s not low in anything, but it sure as hell is HIGH in everything under the sun that’s good for your body… just about every vitamin, mineral, antioxidant, and phytonutrient on the planet! And that means your body will receive all the nutrition it needs to maintain optimal hormonal balance, function at it’s highest capacity, keep your appetite satisfied for hours, and prevent any unwanted cravings.

Keep in mind that last point… when you fill your body with all of the nutrients it needs on a daily basis, you pretty much totally eliminate cravings! This happens because your body is satisfied and doesn’t need to crave any more food, because it has all of the nutrients it needs.

I’ve experienced this myself. Years ago, I used to crave sweets ALL THE TIME. But now that I eat the balanced diet that I do these days, I can’t say that I’ve had a craving in at least 5 years! No joke.

Alright, here’s the special muscle meal plan recipe:

The Ultimate Muscle Salad

approx 1-2 cups spinach leaves

approx 1-2 cups mixed leaf lettuce

shredded carrots

1/2 of a ripe avocado, diced

2 hard boiled eggs, diced (preferrably organic, cage free)

3 Tbsp chopped pecans

1/4 cup dried cranberries

top with homemade dressing made of balsamic vinegar, extra virgin olive oil, and Udo’s Choice Oil Blend (3/4 of total liquid should come from the vinegar)

Mix it all together and you’ve got one delicious and ridiculously nutritious salad. For an extra shot of antioxidants, wash it all down with some homemade iced green/white/oolong tea lightly sweetened with the natural sweetener Stevia or a little touch of raw honey.

Alright, now let’s look at the approx macronutrient breakdown:

Prot: 23 g., Carbs: 48 g., Fiber: 12 g., Fat: 45 g., Calories: 650

Now before you throw your arms up in disgust and call me crazy for recommending such a high fat, high calorie meal, keep in mind to scale back the portion sizes for your own caloric goal. The portions above are simply the portions that I use considering that my maintenance caloric intake is around 3000 calories/day. If your maintenance is 2000 calories/day, then scale back the portions accordingly.

Also, I don’t care about the high fat content of this meal… because every last gram of the fat in this meal is VERY healthy… from the pecans, the olive oil, the Udo’s oil, the fresh avocado… and yes, even the fat from the eggs is good for you!

How about the carbs? Well, out of a total of 48 grams, you’ve got 12 grams of fiber. That’s a pretty good ratio. Also, the healthy fats and protein in this meal will slow down the carbohydrate digestion, giving you a healthy glycemic response and steady controlled blood sugar.

Alright, so you’re probably also wondering why there isn’t a larger amount of protein. After all, protein is all the rage with bodybuilders, right. Well, actually 23 grams isn’t too shabby, especially considering 14 grams of that comes from the highly bioavailable protein from the hard boiled eggs. Also consider that this meal has a whole lot of healthy fats, which increases the utilization of your protein. This happens because your body does not need to use your protein for energy, and can instead use it for muscle building or maintenance, and all of the other various functions that amino acids are needed for in the body.

Overall, with this meal plan, you’ve got a great mix of healthy fats, good fibrous carbs, quality protein, and a huge diversity of vitamins, minerals, antioxidants, and other trace nutrients.

Building Muscle What Is It Worth To You

It seems like steroids are everywhere you turn your head these days. On the news, in most sporting circles, in high schools, on the street, in foreign drug rings, and on and on. It’s amazing what people think they know and really don’t know about building muscle. While most people are probably getting sick of it, I for one and glad that this is happening. I as a bodybuilder think that it is about time that this became “dinner table” talk because people’s perceptions really need to be changed in order for this sport that I love to be a legitimate endeavor.

Building muscle is a very complicated and often abused activity. I believe there are good and bad reasons for doing it. Human strength and the muscular body are amazing and beautiful things, in my opinion, but only if it takes hard work to do it and only if it is done in a healthy way. Pushing the limits of human performance in athletics is awesome and a great motivator for people to stay healthy and fit, but the problem is that these have stopped being the prime movers in the “business” of sports. The whole problem is that is has become a business and whenever money becomes the motivation the dark side starts creeping in.

It is amazing what people will do for power whether it is prestige, or wealth, or popularity, or visibility, or whatever. All that happens is that people get hurt and the sport is denigrated and ends up losing the respect and all of the above things that people are craving when they become involved in it. I mean come on can it be that fun to be better than everyone else, when it means that you have to resort to cheating to do it? Aren’t the best things in life those things that don’t come easy? And since when did the risk of death become worth it to so many people in exchange for a few fleeting moments of “respect” that you’re give? Well I want to be the first to tell you that all people who spend a lot of time building muscle are vain.

Why do I spend lots of time building muscle? Well for one thing it is a healthy thing to do when done correctly. It protects you from all sorts of injuries and pains. It keeps you fit as muscle is one of the best metabolizers in your body. It makes your bones strong, it protects your joints, it gives you good balance and control of your body, it allows you to do activities that you enjoy for longer. It also has positive effects on you mental health. It gives you a sense of accomplishment, it elevates your mood, makes you more confident, gives you the same kind of high that a runner gets by releasing natural endorphins, etc.

So by all means get into sports and get strong but do it for the right reasons and in the right ways or you are going to end up exactly where you don’t want to be

It was my birthday last week, and I can't tell you how much I enjoyed that day. Right from when my wall clock stuck 12, my mobile phone started ringing. There were back to back calls along with the beeps of messages of birthday greetings. When the pace of these messages started to slow down, then bouquets started raining. It went on till 12 o'clock at noon. I was completed overwhelmed with all that messages, phone calls, and bouquets, as I had not expected such a response from my friends and relatives. The reason I did not anticipate all this is that last year on my birthday I did not get a single call apart from my parents. And because that I thought people may have forgotten me as I am far away from them sitting in the capital.

Then I stopped reminiscing about the past and came back to the present. I thought they have made my day, and now it is my turn to show my gratitude towards them. And then the idea stuck of throwing a party that will also serve as a get together. But there was a dilemma in my mind and that was where should I give this party, for most of my friends are vegetarian, and only a few are non-vegetarian. So, if I go for a non-vegetarian restaurant, the friends those are vegetarian will not be happy. Thus, I thought it is best to go with a vegetarian outlet, for non-vegetarian won't mind eating in a vegetarian place.

In my search to find a good restaurant, I checked out almost hundred hotels and restaurant, but to my surprise I didn't get any good restaurant. It was then I called up one of my close friends for his suggestion. He told me if I really want to enjoy my birthday party to the fullest, then I must choose Sudh restaurant, for there you will have everything that is required for a good party. Any party which is given on birthdays, marriage anniversaries, and for any other occasion, is remembered for the quality of food that is served over there. The food was so delicious that everyone of the invitee licked their fingers till the last morsel of the food, it was followed by sweet desserts and it was an absolute ecstasy.

Directions

Put flour, salt, and baking powder into a mixing bowl. Mix the shortening or oil into the flour mixture until it forms pea-size balls. Add the lukewarm water, a little at a time, until the dough is soft and pliable.
On a floured surface, knead the dough until smooth, for 1 to 2 minutes. Place in a bowl, cover with a clean dish towel, and let it "rest" for 30 minutes. Knead dough and form 8 to 10 balls. Roll them out as thin and round as possible.
Preheat an ungreased griddle or cast-iron frying pan. Cook tortillas on griddle one at a time, flipping when a bubble forms (less than a minute). Put cooked tortillas in a plastic bag until ready to serve, to keep them warm and soft. Serve with butter, or fill with eggs, cheese, or cooked chicken.

How kids can help: Sometimes Garcia will give her granddaughter a small cookie cutter to press out fun shapes. Ashley's favorite way to eat her tortilla is warm, and filled with scrambled eggs or cheese.

Indian Chicken and Rice Salad

Ingredients - 12 Servings - 3

1 1/2 cups (300g) basmati rice
2 1/4 cups (560ml) water
2 cups coarsely shredded Steggles roast chicken
1 tablespoon tandoori paste
2 tablespoons natural yoghurt
1 Lebanese cucumber, thinly sliced lengthways
1 carrot, peeled, thinly sliced length ways
1/2 cup coarsely coriander
1/2 cup mint leaves
Mango chutney, to serve
Natural yoghurt, extra, to serve

Rinse the rice in a sieve under cold running water until the water runs clear. Place rice and water in a large saucepan. Cover with a tight-fitting lid or foil and bring to the boil over high heat. Reduce heat to low and cook for 10 minutes or until water is absorbed. Remove from the heat and set aside, covered, for 5 minutes. Set aside to cool slightly.
Step 2

Heat a large frying pan over medium heat. Add the chicken, tandoori paste and yoghurt and cook, stirring, for 5 minutes or until well combined and heated through. Remove from heat.
Step 3

Spoon the rice among serving bowls. Arrange the cucumber and carrot ribbons over the rice. Top with chicken mixture, coriander, mint, mango chutney and dollop with yoghurt. Serve immediately.

Lemon Poached Chicken & Potato Salad

Ingredients


4 small chicken breast fillets, trimmed
1 lemon, rind removed (see hint), juiced
750g kipfler or pink fir potatoes, scrubbed
100ml extra-virgin olive oil
150g baby green beans, trimmed, halved
1 bunch asparagus, trimmed, cut into thirds crossways
1 tablespoon dill leaves, chopped
2 tablespoons chopped chives

Method

Place chicken in a large, deep frying pan with lemon rind. Cover with cold water. Bring to the boil over medium heat. Reduce heat to low and simmer for 12 minutes. Remove chicken from pan. Cool slightly. Slice across the grain.

Meanwhile, cook potatoes in a large saucepan of boiling water for 15 to 20 minutes or until tender. Using tongs, transfer to a chopping board. Stand for 10 minutes or until still warm but cool enough to handle. Peel potatoes and cut into chunks. Place in a large bowl.

Using a fork, whisk oil, 1/4 cup lemon juice and salt and pepper in a jug. Drizzle three-quarters of the dressing over potato. Stir gently to coat.

Place beans and asparagus in a heatproof bowl. Cover with boiling water. Stand for 3 minutes. Drain. Add to potato with chicken, dill and chives. Drizzle with remaining dressing. Toss gently to combine. Season with pepper. Serve.

Hint: Use a potato peeler to remove the rind from a lemon, avoiding the white pith which can make the poaching liquid taste bitter.

This recipe would take 20 mins for preparation & 30 mins to cook.

Baked Lemon Chicken with Ricotta and Puree

12 Ingredients and 6 Servings

6 chicken breast fillets with skin (wing bone attached - optional)
2 tbs extra virgin olive oil, plus extra to drizzle
1 lemon, sliced
1 bunch mint leaves picked
1 bunch oregano leaves picked
200g sugar snap peas
450g fresh peas
2 bunches thin asparagus, woody ends trimmed
250g thin green beans, trimmed

1 cup (240g) low-fat fresh ricotta
1 garlic clove, crushed
Potato wafers, to serve

Place chicken, oil, and lemon in a large bowl. Tear half the mint leaves and add to the chicken with half the oregano. Season and toss to coat the chicken, then cover and marinate in the fridge for 2 hours.
Step 2

Preheat the oven to 180?C. Cook the sugar snaps and peas in a large pan of boiling salted water for 2 minutes. Add asparagus and beans and cook for a further 2 minutes, then drain. Place in a bowl of iced water to stop cooking.
Step 3

Roughly chop half the vegetables, and then blend in a food processor with the ricotta, garlic, and remaining herbs (reserving a few mint leaves to garnish) until smooth. Transfer to a saucepan, season, and then set aside.
Step 4

Heat an ovenproof fry pan over medium-high heat. Remove chicken from marinade (reserving lemon slices) and cook skin- side down, in batches, for 2-3 minutes until golden. Turn and cook for 1 minute, then turn skin-side up and add reserve lemon to pan. Transfer to the oven for 10 minutes or until chicken is cooked.
Step 5

Meanwhile, place the ricotta sauce over very low heat for 1 minute just to heat through. Reheat the remaining blanched vegetables in a pan of boiling salted water for 30 seconds, then drain.
Step 6

Divide the sauce among serving plates and top with chicken. Place some of the green vegetables, and the parsley and potato wafers on the plates, then drizzle everything with a little olive oil and scatter with the reserved mint leaves.
