Interesting cod, haddock and tuna recipes?

My mum only ever buys those breaded cod fillets, which is getting very boring. so we were thinking about buying just plain fish fillets and using them in some tasty recipes.





does anyone have any tried-and-tested recipes for these types of fish?


the only idea i've had is some kind of tomato salsa topping for cod, but i wouldn't know what ingredients would need to be used etc etc.





and please can i have measurements in english terms - i.e not in 'cup' measurements, because we don't have any measuring cups.

greek style roast cod





8 sun-dried tomatoes (not in oil)


1 garlic clove, roughly chopped


large handful of fresh basil leaves, plus a few leaves to garnish


600ml/1 pint boiling water


700g/1 lb 9oz red-skinned potatoes, peeled and cut into slices 1cm/0.5in thick


2 red onions, cut into rings


2 tbsp black olives, pitted


4 x 150g/5oz skinless, boneless cod fillets


1 lemon


salt and freshly ground black pepper








1. Preheat the oven to 220C/425F/Gas 7.


2. Place the sun-dried tomatoes, garlic and basil in a mini-chopper or small food processor and blend until very finely chopped. Stir into the boiling water.


3. Arrange the potato slices and onion rings in a roasting tin and pour over the tomato and herb liquid. Season with salt and black pepper and roast for 30 minutes.


4. Once the potatoes are tender, scatter over the olives and arrange the cod fillets on top of the potatoes.


5. Cut four thin slices from the lemon and place one on each fillet. Squeeze over the juice from the rest of the lemon.


6. Season the fish, then return the roasting tin to the oven for 8-10 minutes until the fish is just cooked. Divide between plates and serve.

cod in butter sauce





ngredients: Serves 4


2 medium shallots, finely chopped


50g unsalted butter


4 medium sized cod steaks


Salt and pepper


Fresh lemon juice


Dash of lime juice


Salt and pepper to taste


Sprig of parsley, finely chopped





Cooking Instructions:





1. Melt the butter in a pan on a medium heat and add the shallot, cook for five or six minutes until they soften.





2. Put the fish into a greased oven proof dish, cover with the butter, shallots and pepper to taste. Then cook in a preheated over for five minutes at 220c.





3. Remove from the oven and cover the dish carefully with foil, reduce the heat to 180c and bake for a further 15-20 minutes. If the cod looks like it's drying out, baste with the butter and even add a little more if necessary.





4. When ready, remove the liquid into a small pan add a teaspoon of lemon juice and the parsley and stir over a medium heat for five minutes. Keep the fish warm and serve with the sauce, mashed potatoes and fresh peas or mange tout.Interesting cod, haddock and tuna recipes?
An excellent recipe for tuna patty is to :


Drain Tuna 6 oz add 3/4 cup or 5 or 6 squares crushed saltine crackers


TB spoon diced onion (optional)


salt and pepper to taste


1 egg mix and form palm size patties, Flatten!


In 1/2 inch Oil, hot! fry, 2 to 3 minutes .


Flip and fry 2 to 3 minutes on other side.


Place on paper towel to absorb and excess oil.


Place a slice American cheese and patty on hamburger bun,


Add Lettuce and tomato if you like.


I have not tried Salmon yet but someday LOL
u will only like this if u dont mind ur fish not being cooked throughly





cook a tuna fillet on each side but leaveing the middle raw with lemon, olive oil and soy sauce


then cut into thin slices


then put on a plate and dribble olive oil over it , sprinkle salt and a bit of soy sauce
Baked Cod Portuguese





SERVES 4





Ingredients


29.58 ml olive oil


1.00 onion, peeled and chopped


2.00 garlic cloves, peeled and chopped


1.00 green pepper, cored and chopped


1 (397 g) can tomatoes, chopped


9.86 ml paprika


4.00 cod steaks or fillets


chopped fresh parsley (to garnish)





Directions


1 Preheat the oven to 375F or 190C and grease an ovenproof dish.


2 Fry the onion, garlic and pepper in a pan to soften. Add the tomatoes and paprika and simmer for about 5 minutes until the sauce is thickened. Taste and add salt and pepper if required.


3 Put your cod in the dish, pour your tomato sauce over and bake in the oven for about 20 minutes until the cod is cooked. Sprinkle the parsley over and serve.





Easy One-Dish Quinoa and Tuna





Ingredients


354.89 ml quinoa


709.77 ml chicken broth


177.44 ml frozen spinach


0.33 onion, diced


4.93 ml minced garlic (depending on how garlicky you like it!)


2.46 ml italian seasoning


salt (to taste)


170.10 g tuna (splurge on the good kind, it really tastes better)


118.30 ml cheese (optional)





Directions


1 Combine all ingredients except cheese and tuna in a medium sauce pan.


2 Cover with lid and bring to a boil.


3 Turn down heat and simmer for 15 minutes or until liquid is absorbed. Remove from heat and add cheese and tuna. Enjoy!





Panko Haddock


Ingredients


453.59 g haddock


473.18 ml panko


236.59 ml milk


118.30 ml butter


29.58 ml lemon juice





Directions


1 Preheat over to 500 degrees. Heating at a higher tempeture for lower time keeps the fish moist- especially with milk.


2 Clean fish well. Make sure to dry well. Cut into equal serving pieces.


3 Place milk and breadcrumbs in seperate bowls.


4 Soak fish in milk. This is the key to make it moist.


5 Coat fish with panko breadcrumbs. Make sure to add seasoning to plain panko crumbs. I use oregano, pepper, ground mustard -- and have added hot peppers (but I like a little spice in everything). The key is adding some seasoning to the Panko breadcrumbs.


6 Spray a glass cooking dish with PAM.


7 Place each coated filet in the glass dish.


8 Drizzle lemon juice equally over fish.


9 Melt butter in micowave.


10 Drizzle melted butter over fish.


11 Cook for 15 minutes.


12 Enjoy.


Serves 4.
