For cookie:1 and 1/2 cups all purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup firmly packed brown sugar
1/2 cup butter, softened
1 egg and one egg yolk (reserve white)
1/4 teaspoon vanilla extract
1/8 teaspoon maple flavoring
2 cups pecan halves
For frosting:
1 container buttercream fudge frosting
caramel syrup (optional)
1. In a large bowl, combine all ingredients except egg whites and pecans; blend well with mixer. Chill dough.
2. Set oven to 350 degrees F.
3. Arrange pecan halves in groups of 3 or 5 on greased cookie sheets, to resemble a head and legs of a turtle. Use a rounded teaspoon of dough, and shape dough into balls. Dip bottom of dough balls into unbeaten egg white; press lightly onto pecan halves. Be sure the tips of the pecans will show when the cookies are done baking.
4. Bake at 350 degrees F for 10 to 12 minutes. Do not overbake!
5. Cool. Frost tops generously with buttercream fudge frosting. Drizzle with caramel syrup (optional).
