Never tried fresh tuna. Looking for a good recipe or atleast seasonings that go with it.Does anyone have any good tuna recipes? Not from the can, fresh tuna.?I'll assume you eat beef, and eat it rare or medium rare. Start wtih a piece of squeaky fresh good -- preferably Ahi -- tuna. It should be at least an inch thick. Cut away all the nasty bloodline (the black stuff). Also remove any skin. Bring to room temp. Sprinkle liberally with coasre/kosher salt and ALOT of cracked (not ground) black pepper. Heat your best heavy saute pan. Open kitchen window and turn on fan. When pan begins to shimmer with heat, add a scant teaspoon of a good neutral cooking oil, canola or grapeseed are best. Lay tuna in. Cook in minute. turn over and repeat. turn on sides briefly just to color it. Remove from pan. Let it rest. Slice as you would a steak (half inch slices on a bias). Enjoy.
A nice sauce thats easy is half soy and half rice wine vinegar with some chopped garlic and fresh ginger. Little pinch of hot pepper. Maybe a squeeze of lime. It should be rocking good. It depends on your style of spices but add some cajun spices or make it in a casserole or BBQ it. It taste good any way you cook it. Even marinate it in a lemon juice mixture. Also, marinate it in bourbon, rum or brandy or cooking cherry. It gives it some tang to it. Just experiment with the spices and juices or just make it as you go...

sushi!! you can make sushi from tuna. but u need a special vinegar to put on your base(rice). it is really easy to assemble. just buy raw fish from almost any super market or at least any Asian super markets. then shape your rice in to a rectangle like shape. then put the fish on the rice and serve and DON'T heat up your fish. u can also put washabi and soy sauce on the sushi. also if you dont like spicey stuff dont put washabi! and it is a japanese food not chinese!!!
first of all, if you have an indoor grill (forman)etc. don't use it it will ruin your grill. just grill it on outside grill, little lemon and black pepper is all you need. don't over cook.
MAGIC TUNA FISH SALAD SANDWICHES
2 cans of tuna fish packed in water
1 bunch of green onions
3 jalapeno peppers
1 cup of bean sprouts
1 cup of fresh white mushrooms
1 medium tomato
several leaves of romaine lettuce
1 cucumber
3 tablespoons of mayonnaise (or if you're concerned about fat/calories use fat-free mayo)
parmesan or romano cheese (you can also top with sliced cheddar, monterey jack, pepper jack or muenster)
2- 4 slices of whole wheat bread
Chop the following ingredients into small pieces; green onions, mushrooms, set aside.
Slice jalapenos down the middle from top to bottom, discard seeds, chop into small pieces and set aside.
Slice tomatoes and peel and slice cucumbers, keep these ingredients seperate from the other veggies.
In a large bowl mix 2 cans of drained tuna, 3 tablespoons of mayonnaise thoroughly, add jalapenos, bean sprouts, green onions and mushrooms, stir ingredients until everything is mixed into tuna and mayonnaise.
Spoon this mixture onto a slice of whole wheat bread covering bread evenly, top with cheese, tomato slices, lettuce and cucumber slices and finish with a slice of wheat bread on top. Cut diagonally serve with a slice of pickle and enjoy!
Yes! My husband found this one and made it for me the night he proposed. Needless to say it was a real winner!
Use tuna steaks for this.
Get baking paper and cut 50cm piece for each steak.
Put tuna steak on the centre of the paper and on top put:
1 thick slice of onion
2 slices of a good tomato (oxheart or organic)
2 slices of green capsicum
pour on a good dash of white wine and sprinkle some mixed herbs and cracked pepper on top
pull the two long edges of the paper together and roll down, then tuck the other edges underneath to form a little package
put this in the oven on 160 degrees Celsius for 20-30 minutes

Tuna Steaks
Sprinkle generously with course ground pepper, gently pressing into the steak with a fork on both sides.
Cook in a hot skillet, using about one tablespoon oriental sesame oil.
Remove from pan when done to your liking and tent on platter with foil.
To the skillet add 1/4 C. good sherry and one TBSP. soy sauce. Stirring until it boils.
Pour over the tuna.
Awesome.
