* 1/3 cup chicken broth 2 tablespoons olive oil
* 3 tablespoons basalmic vinegar 1/2 cup chopped onions
* 1 teaspoon fresh chopped 1 teaspoon finely minced garlic
* rosemary, or 1/2 1 can (1 pound 12 ounces)
* dried rosemary, crumbled plum tomatoes, drained
* 3 whole chicken breasts, 1/4 teaspoon salt
* cut in half Freshly ground black pepper
Directions:
* Combine chicken broth, vinegar and rosemary; pour over chicken,
* cover, and refrigerate overnight.
* Remove chicken and pat dry, reserving marinade. Heat oil in
* a heavy frying pan and brown chicken in two batches.
* Remove checken from the pan; add onions and garlic. Saute
* over medium heat for 5 minutes, until onions are softened.
* Add marinade to pan and bring to a simmer. Add chicken, baste
* with some of marinade, cover and simmer 25 minutes.
* Remove chicken and keep warm. Add tomatoes, salt and pepper;
* simmer about 5 minutes, or until thickened.
* Pour sauce over chicken.
Chicken With Olives

* 2,3 tablespoons olive oil
* 2 onions 鈥?sliced
* 1 teaspoon cooking salt
* 1 teaspoon pepper
* 1/4 teaspoon ginger
* 1 tablespoon paprika
* 1 kg chicken breasts
* 1 onion 鈥?finely chopped
* 200 grams green olives
* 1 lemon - freshly squeezed juice
Directions:
* Heat the oil in large sauce pan. Add 3/4 cup water gradually. Slice 2
onions and finally chop the third one. Grate the ginger. Add onion slices,
sprinkle with spices. Lay chicken on top. Steam over low heat for 20
minutes. Add finely chopped onion and olives, and steam for another 5
minutes. Just before serving squeeze on lemon.
Curried ChickenBreasts- South Beach Diet Phase 2 Appropriate
Ingredients:
* 4 - 6 skinless, boneless chicken breast halves
* 2 - 4 cloves garlic, finely chopped
* 1 cup (250 ml) plain low fat yogurt
* 1/2 cup (125 ml) lemon or lime juice
* 2 tsp (10 ml) grated ginger
* 2 tsp (10 ml) ground coriander
* 2 tsp (10 ml) curry powder
* 1 tsp (5 ml) grated lemon or lime zest
* 1 tsp (5 ml) cayenne, or to taste
* Salt and freshly ground pepper to taste
Directions:
* Combine all ingredients in a large, nonreactive bowl and toss to
thoroughly combine the ingredients and coat the chicken breasts with
the mixture. Marinate overnight in the refrigerator. Broil or grill

You can mix it with a fat-free dressing like Italian or Ranch or fat-free mayo then serve it over some fresh crisp lettuce or on celery sticks.
Make a tuna salad with tuna, fat-free mayo, pickles, eggs, onion and pecans and then serve it with cantaloupe or honey dew melon.

i like it with low fat mayo (not the stuff thats considered dressing, but the actual mayo stuff its tastes SO much better) and crackers, or one serving of potato chips used as crackers. i love my tuna plain on salt and vinegar or any other flavored thick cut kettle chip used likea cracker, so good, tasty and if you keep your portions controlled very very healthy!
Get a multi grain wrap-they have kinds that r 50 calories. Speard lightly , 1 tablespoon of fat free or lowfat mayo on the wrap, and you can add some tuna
get some of those fat-free bread. put some lettuce, tomatos, and the diet tune
have a good apetite!
